Procédés de fabrication et contrôles de qualité d’un jus gazéifié : orange N’GAOUS

Abstract

Résumé Le jus d'orange est l'une des boissons les plus consommées dans le monde, c'est pourquoi notre étude s'est limitée à l'évaluation et à l'appréciation de la qualité de la boisson gazeuse base d'orange (classique) par l'entreprise N'gaous ainsi qu'au suivi les procédés et les conditions de fabrication, depuis le traitement des eaux utilisées pour la fabrication jusqu'au produit final. Les résultats obtenus ont montré que les valeurs des analyses physico- chimiques observées sur les matières premières, le produit semi-fini et le produit fini sont conformes aux normes de l'entreprise. Ces résultats indiquent que le produit est efficace et consommable, ce qui démontre que la société N'gaous respecte effectivement les conditions et les réglementations industrielles. Mots clés : Boisson gazeuse, procédé de fabrication, produits finit, analyses physico-chimiques. Abstract Orange juice is one of the most consumed beverages in the world. That is why our study focused on evaluating and assessing the quality of the base orange juice (classic juice) by the company N'gaous and monitoring the manufacturing stages and conditions, starting from the initial treatment of water used for production to the final product. The results obtained showed that the values of physical and chemical analyses observed on the raw materials, semi-finished product, and finished product are in line with the standards set by the company. These results indicate that the product is effective and safe for consumption, demonstrating that the company N'gaous actually adheres to industrial conditions and regulations.
